Ingredients
- ½ cup vegetable or chicken stock
- 1 1/1 cups broccoli, chopped
- 6 garlic cloves, sliced
- ½ cup mushroom, sliced
- ½ cup red pepper, chopped
- 1 sausage link
- ⅓ cup red onion, chopped
- Feta cheese
- Salt & pepper
Instructions
- Add stock, broccoli, and garlic to pan over medium heat. The stock should boil.
- When liquid has evaporated, add peppers, mushrooms, and red onions and sauté for a few minutes until cooked through. Salt and pepper to taste.
- Meanwhile, cook sausage and pasta as desired.
- Toss vegetables, sliced sausage, and pasta in pan until evenly mixed.
- Top with feta cheese and a drizzle of olive oil.
This is a super simple recipe which is satisfying and relatively healthy. First add stock, garlic, and broccoli to a pan over medium-heat until stock evaporates.
Next, add the rest of the vegetables for a few minutes to sweat out additional moisture.
Meanwhile, cook a sausage (we chose Trader Joe’s Jalapeno Chicken Sausage, but any type will do) however you like. Grilling is probably best, but it was about 15° F outside so we opted to cook it in a pan with some Guinness.
That’s about it! Slice the sausage, toss it with the veggies into the pasta and mix. Top with feta cheese if you desire to add some saltiness.
